Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. The past month has been one that she would have found the good in and made sure everyone knew about it. She wouldnt have stayed in her home scared of something unknown. She probably would have done a ton of research and then said, what can anyone else really tell me, they don\'t know and have never been through this before. It is all a lot of guessing and a lot of opinions, with people making decisions that I can make for myself. Last month was a month that we lost a few more family members, like her sister-in-law Rosemary and her nephew\'s wife Patty. My dad is the last of the 4 kids in his family still living. "Onward and upward" was another saying that Mom said numerous times. Life, friendships, and most of all FAMILY are meant to be enjoyed every day. We hope you\'re living and loving every second of your life.For Fathers Day.Salted Pretzel CowboyParty CookiesRecipe and photo courtesy of halfbakedharvest.comINGREDIENTS2 sticks (1 cup) salted butter, at room temperature3/4 cup dark brown sugar1/4 cup granulated sugar2 large eggs, at room temperature1 tablespoon vanilla extract1 3/4 cups + 2 tablespoons all-purpose flour1 teaspoon baking soda1/2 teaspoon ground cinnamon (optional)1/2 teaspoon kosher salt1 1/2 cups old fashioned oats1 1/2 cups shredded unsweetened coconut1 1/2 cups semi-sweet chocolate chips1/2-1 cup semi-sweet chocolate chunks1 cup mini pretzel twists, crushedflaky sea salt, for sprinklingDIRECTIONSPreheat the oven to 350 degrees F. Line a baking sheet with parchment paper.In a large mixing bowl, beat together the butter, brown sugar, and granulated sugar until combined. Beat in the eggs, 1 at a time, until combined. Add the vanilla, beating until creamy. Add the flour, cinnamon (if using), baking soda, and salt. Fold in the oats, coconut, chocolate chips, and chocolate chunks.Roll the dough into rounded 2 tablespoon size balls. Place 3 inches apart on the prepared baking sheet.
