January 2018 30 KICKIN’ OFF THE NEW YEAR! My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. We kicked off the New Year with, Great Granddaughter Rileigh’s first Tea Party. Great Grandma, Grandma, Mom and all her Aunts were dressed, to make it a Tea Party to remember. In fact it was an event that she talked about all year and wanted to do it again. This month we chose recipes that will help celebrate a new year! aloha punch INGREDIENTS 1 pkg. (10 oz.) frozen, sliced peaches, thawed 1 pkg. (10 oz.) frozen, mixed fruits, thawed 1 can (6 oz.) frozen orange juice concentrate 1 1/2 c, water 2 T. lemon juice 6 thin lime slices Mint sprig 4/5 qt. dry white wine, chilled 1 qt. Champagne or gingerale, chilled DIRECTIONS Combine undrained fruits, orange juice concentrate, water and lemon juice. Arrange some of the fruit and lime slices in the bottom of a 4 1/2 cup ring mold. Pour in enough juice mixture to barely cover fruits. Freeze until firm. Thoroughly chill remaining fruit and juice mixture. When bottom layer is frozen, pour on remaining mixture. Freeze until firm. At serving time, pour wine and champagne into a chilled punch bowl. Dip mold quickly in cold water. Unmold punch bowl. Garnish ice ring with mint sprig.
