ArizonaRealCountry.com 27 October 2017 Creamy Corn Spoon Bread INGREDIENTS 1 1/3 c. canned whole kernel corn 1 1/3 c. canned cream style corn 1/2 c. (1 stick) margarine, melted 1 c. sour cream 2 eggs, beaten to blend 1 pkg. (8 oz.) corn muffin mix 3/4 c. grated cheddar cheese DIRECTIONS Preheat oven to 375°. Stir corns and margarine in deep, 2 qt. round baking dish. Fold in sour cream and eggs. Add corn muffin mix and blend well. Bake until center of spoon bread is just set, about 1 hour. Sprinkle cheese over top and continue baking until melted, 1-2 minutes. Serve hot. crock pot peach, apple, apricot or pear butter INGREDIENTS Fresh fruit of choice 1/2 to 3/4 c. sugar Cinnamon and cloves to taste DIRECTIONS Wash, peel, pit and cook fresh peaches, apricots, apples, or pears in crock pot. Set on high until fruit is soft. Mash or puree fruit and measure. To each cup of fruit, add 1/2 to 3/4 c. sugar, cinnamon, and cloves to taste. Then, cook on high in crock pot for 8-10 hours, stirring occasionally. Remove cover during last half of cooking. Put in sterilized jars and seal for future use.
