February 2018 30 CARRY ON THE TRADITION My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. February means Gold Rush Days in Wickenburg! We always started Saturday morning, at Wise Owl Senior Center for breakfast with our good friends, Jack and Betty. Then, we took off to our place along the parade route to watch the most amazing parade. After that, it’s out to the rodeo grounds for the rodeo. To end the day, it’s a great dinner in Wickenburg, a bottle of wine and time for us get some much- needed rest. For others, the night is young for the carnival, dancing or a concert. This month we chose recipes that will help your Valentine’s Day be a little sweeter! strawberry Muffins INGREDIENTS 1 c. flour 1 1/4 t. baking powder 1 T. sugar 1/4 t. salt 1 egg 1/4 c. melted butter Up to 1/2 c. milk 2 fresh strawberries, sliced DIRECTIONS Preheat oven to 400°. Mix flour, baking powder, sugar and salt. Cool melted butter and beat with egg. Add to dry mixture. Slowly add milk until batter is thick. I usually use almost the full 1/2 cup.
