(8 oz.) shredded medium-sharp cheddar cheese Salsa (recipe below) Condiments (optional): sliced or diced avocados, tomatoes, onion, shredded lettuce, alfalfa sprouts, pitted ripe olives, sour cream, beans, peppers, meat DIRECTIONS Beat eggs, milk and salt just until blended. Pour into greased 13x9x2" baking pan. Bake in a preheated oven at 325° for 20 minutes or until set. Sprinkle with cheese; bake 5 minutes or until cheese melts. Let stand 5 minutes; cut into squares; spoon salsa (recipe below) on top. Serve with condiments. Salsa INGREDIENTS 1 can (14 1/2 oz.) whole tomatoes, 2 canned jalapeno peppers, broken up seeded and minced 1 sm. onion, minced 1/2 t. chili powder 2 cloves garlic, pressed 1/2 t. cumin DIRECTIONS In a small saucepan bring all ingredients to boil. Reduce heat; stirring occasionally, simmer uncovered 30 minutes or until thickened. Serve warm or at room temperature. fried apple pies INGREDIENTS 1 lb. fresh, dried apples, sliced 3 thin slices of unpeeled orange 1 lb. butter 3 thin slices unpeeled lemon 3/4 lb. sugar Vegetable oil Pie dough DIRECTIONS Chop orange and lemon slices, combine with apples in pan, cover "with water, and cook until tender, about 15 minutes. Remove from heat, stir in butter and sugar. Chill. Cut pie dough rounds with a No. 10 can. Put about 2 oz. of fruit on one side, fold in half moon shape, crimp edges.
