September 2018 42 WINDING DOWN My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. In September we were always winding down from our summer RV adventures and getting excited to get back home. Mom always said, “Living in the RV for the summer is great but getting HOME to our house is exciting.” She always enjoyed being away from the heat but couldn’t wait to delight in the fall, winter, and spring seasons of Arizona! Last stop before heading home was San Diego, spending time with friends on their boat and gazing at the ocean with all the beauty that was created for us to enjoy. When Mom became a pilot she would always stop to see anything that had to do with aviation and that meant an enjoyable time was had by all at the San Diego Air & Space Museum. Hope everyone enjoyed their summer and in October be sure to make plans to join us in Buckeye, Arizona for Octoberfest. Nutty Beef & Cheese Ball INGREDIENTS 2 pkg. (2 1/2 oz.) sliced dried beef, finely chopped 1 pkg. cream cheese, softened 1 1/2 c. shredded Cheddar cheese 1 T. prepared horseradish 1/2 c. finely chopped nuts DIRECTIONS Combine all ingredients, except nuts, and form into a ball. Chill. Roll in chopped nuts; wrap in plastic wrap and refrigerate until serving time. Serve as spread for crackers. Quicky Drink INGREDIENTS 1 pkg. (10 oz.) frozen raspberries in syrup 1/2 c. sugar 2 T. Grand Marnier liquer or orange juice Strawberries DIRECTIONS Pour over fresh, hulled, chilled strawberries. Serve on a hot day!
