ArizonaRealCountry.com 43 September 2018 Corn Flake Chocolate Chip Cookies INGREDIENTS 3 1/2 c. sifted flour 1 c. granulated sugar 1 t. baking powder 3/4 c. firmly packed dark brown sugar 1/2 t. salt 1/4 c. hot water 1 1/2 c. (3 sticks) butter or 1 egg margarine, softened 1 pkg. (6 oz.) semi-sweet chocolate chips 1 t. vanilla 1 1/2 c. corn flakes DIRECTIONS Preheat oven to moderate 375˚. Grease two cookie sheets. Sift flour, baking posder and salt onto waxed paper. Beat butter and sugars in a large bowl with mixer until light and fluffy. Beat in water, egg and vanilla. Gradually stir in flour mixture. Gently stir in chocolate morsels and corn flakes, trying not to crush corn flakes. Drop mixture by heaping teaspoon 1" apart onto prepared cookie sheets. Bake for 5 minutes or until cookies are set and golden brown. Cool on cookie cheets for several minutes. Transfer to wire rack; cool completely. Store in tightly covered container. Summer Sausage INGREDIENTS 2 lb. lean hamburger 1/4 t. pepper 1/8 t. garlic powder 1/4 t. onion powder 1 T. liquid smoke 1 c. water 2 T. Morton tender quick 1 T. mustard powder DIRECTIONS Mix thoroughly, put in refrigerator for 12 hours. Then make into 2 rolls, wrap in foil and return to refrigerator for 12 hours more. Place on cookie sheet or cake pan and back at 350˚ for 1/2 hour. Reduce heat. Bake at 250˚ for 1/2 hour. Remove from oven, unwrap foil and drain on rack. Slice and serve when cool. Stuffed tomatoes INGREDIENTS Tomatoes Rice 1 lb. ground beef Onion 1 egg Salt and pepper DIRECTIONS Select tomatoes about the same size. Wash and cut core out. Take a teaspoon and very gently hollow out centers, being careful not to break the skin. Cook 1 c. rice until nearly done, rinse and drain. Add 1 lb. raw ground beef, onion to your desire, 1 whole egg, salt and pepper. Mix thoroughly. Stuff tomatoes with mixture and put in shallow baking dish or shallow pan with enough water to barely cover the bottom. Bake 1 1/2 hours in a 350 oven. Squares of cheese may be added to center of each tomato before baking. To increase use 1 lb. ground beef to 1 c. rice proportions.
