June 2018 26 AN UNFORGETTABLE GETAWAY My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. One of those getaways that you hear about on the radio that just sounds like fun. We did it! My Mom, Dad, Carm, and I, just the four of us in London, England for a week. We heard the deal on the radio, called each other, said let's go and what a great trip it was. Mom and Dad wore us out, they wanted to see and do everything. Two great moments happened in London, for me. One, we walked past a bakery and I said “wow those little cakes look good,” but we did not stop. Pastries are one of my biggest weaknesses. That night at about 10 pm there was knocking on my hotel room door; I opened it to find my Dad standing there with two little cakes. He handed them to me and said goodnight. WOW, what a DAD and they were awesome. I ate one and a half myself. The second memory was seeing Mama Mia for the first time live on stage. Yes, we found tickets and what a great night and a great cast in London. That was a trip we talked about for years after. Happy Fathers Day! Spinach Dip INGREDIENTS 1 pkg. Hidden Valley Ranch salad dressing mix 1 c. mayonnaise 1 c. sour cream 1 pkg. frozen spinach (don't cook, squeeze out water) Loaf of bread (pumpernickel or rye - optional) Raw vegetables (optional) DIRECTIONS Mix salad dressing, mayonnaise and sour cream. Refrigerate for 2 hours. While the 3 ingredients are refrigerated, thaw out the spinach and squeeze out excess water. Add spinach to the dip. Hollow out a round loaf of bread (pumpernickel or rye) at the last minute. Put the dip in the hole of the bread. Use pieces of bread or raw vegatables to dip.
