ArizonaRealCountry.com 27 June 2018 Aloha Punch INGREDIENTS 1 pkg. (10 oz.) frozen sliced peaches, thawed 1 1/2 c. water 1 pkg. (10 oz.) frozen mixed fruit, thawed 2 T. lemon juice 1 can (6 oz.) frozen orange juice concentrate 6 thin lime slices 4/5 qt. dry white wine, chilled Mint sprig 1 qt. champagne or gingerale, chilled DIRECTIONS Combine undrained fruits, orange juice concentrate, water and lemon juice. Arrange some of the fruit and lime slices in bottom of a 4 1/2 cup ring mold. Pour in enough juice mixture to barely cover fruits. Freeze until firm. Thoroughly chill remaining fruit and juice mixture. When bottom layer is frozen, pour on remaining mixture. Freeze until firm. At serving time, pour wine and champagne into chilled punch bowl. Dip mold quickly in cold water. Unmold into punch bowl. Garnish ice ring with mint sprig. orange slice cookies INGREDIENTS 1 c. brown sugar 2 c. flour 1 c. sugar 1 t. soda 1 c. shortening (oleo) 1 t. baking powder 1/2 t. salt 2 c. quick oatmeal 2 eggs, beaten 1 c. coconut 1-2 c. orange slices, cut into flour DIRECTIONS Mix together shortening, sugars, salt and eggs. Stir in flour, soda, baking powder, oatmeal and coconut. Orange slices are added with flour. Drop by teaspoon on greased cookie sheet. Bake 8-10 minutes at 350°. Hawaiian Terriyaki Shish Kabobs INGREDIENTS 2 lbs. of 1/4-1/2" thick slices or cubes of sirloin steak or other tender beef Various foods to alternate on shish kabobs (see directions below) Marinade: Juice from large can pineapple (reserve pineapple) Chopped green onions 2 t. dry ginger 1 large bottle soy sauce 1 c. water 2 T. oil 1 t. Ajinomoto (optional) DIRECTIONS Marinate steak for several hours or overnight, stirring frequently. Additional marinade may be used if not enough to cover meat. Make shish kabobs of steak (either cut in squares or strips) alternated with your choice of cherry tomatoes, green pepper chunks, large onion pieces, pineapple chunks, and mushrooms alternately placed on skewers with strips of bacon threaded between other choices. Cook shish kabobs over charcoal. Baste with reserved marinade frequently. Turn and barbecue until meat is cooked to your preference. Served with rice or can be eaten on hot dog buns.
