This monthly remembrance of Mom brings back many memories.Make This Summer A Stress Free ZonePerfect picnic cakeIt is the perfect cake to take on a picnic because, without frosting, it is easy to transport and it doesnt have to be kept refrigerated.Recipe and photo courtesy of favfamilyrecipes.comINGREDIENTS1 3/4 cups boiling water1 cup oatmeal quick1/2 cup butter or margarine1 cup brown sugar1 cup white sugar2 eggs1 3/4 cups flour1 tsp baking soda1 Tbsp cocoa1/2 tsp salt1 tsp cinnamon12 oz chocolate chips dividedChopped pecan or walnut piecesDIRECTIONSPour boiling water over butter and oatmeal.Let sit 10 minutes until butter is melted.Add sugars and mix well with a spoon.Add eggs and mix well.Stir in dry ingredients and 1/2 of thechocolate chips.Pour batter into a greased and floured 9x13 pan.Sprinkle remaining chocolate chips and nutson top.Bake 30-35 minutes at 350 degrees.The cake is delicious on its own but is also good topped with whipped cream or vanillaice cream.Prep Time: 10 minutes Cook Time: 30 minutes Total: 40 minutesServes: 1238 June 2021'
