March 2018 26 DREAM COME TRUE My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. One dream my Mom had that did come true, with a lot of work, was getting her pilot’s license. She flew many places and took all the family on trips. Many stories can be told from the plane. Flying was her way to just forget about everything and soar with the angels. What a thrill! She never flew a sea plane that lands on the water before, but what the heck! Once we were flying home from an Oklahoma-Nebraska football game and were caught up in a storm. Mom thought we could fly through it. What a rough white knuckle ride. That was the last storm we flew through. From that time on we landed in the closest airport and waited it out. THANK YOU! This month we chose recipes that are perfect for St. Patrick’s Day!
