Dottie was born in 1935 and passed away in January of 2016. Dottie, did a radio show for many years and wrote a newspaper article weekly. She also published many cookbooks. Dad and Mom retired to Sun City, Arizona and traveled for about 20 years. She loved the country way of life and especially loved Country music and making friends wherever they traveled. Every weeknight, on 96.3 Real Country at 6pm, you can hear “Dottie’s Country Memories” for the hour. You’ll hear some of her favorite songs she listened to over and over, like Merle Haggard, Johnny Cash, Buck Owens and 100’s more. This monthly remembrance of her brings back fond memories of great meals together. We sure love her and we grew up eating many of the recipes printed here. ENJOY! This month we chose recipes that any Dad would love on Father’s Day! down on the farm pot roast and vegetables Need a heavy, covered dutch oven for best results. INGREDIENTS 1 large pot roast (boneless or round, bone in) 6 peeled potatoes, cut in half or quartered 6-8 peeled carrots cut lengthwise 1 large onion, chopped Salt & pepper to taste 1/2 c. water or beef bouillon DIRECTIONS Brown pot roast in small amount of oil and season to taste. Place in heavy dutch oven and pour in water or bouillon and cover. Place in slow oven at 325° for about 2 hours. Add vegetables and bake for another 1 1/2 hours. (Make sure meat does not cook dry. Even better the second day!) Stuffed tomatoes Select tomatoes about the same size. Wash and cut core out. Take a teaspoon and very gently hollow out centers, being careful not to break the skin. Cook 1 c. rice until nearly done, rinse and drain. Add 1 lb. raw ground beef, onion to your desire, 1 whole egg, salt and pepper. Mix thoroughly. Stuff tomatoes with mixture and put in a shallow baking dish or shallow pan with enough water to barely cover the bottom. Bake 1 1/2 hours in a 350° oven. Squares of cheese may be added to the center of each tomato before baking. To increase use 1 lb. ground beef to 1 c. rice proportions.
