ArizonaRealCountry.com 47 February 2019 Casserole Cookies INGREDIENTS 2 eggs, beaten 1 c. coconut 1 c. sugar 1 t. vanilla 1/2 c. chopped nuts 1/4 t. almond flavoring 1 c. cut up dates DIRECTIONS Mix well and pour in a greased casserole dish. Bake at 350° for 30 minutes, stirring a couple of times. Remove from oven. When cool enough to make into balls, roll in granulated sugar. Flatten slightly and place a red cherry on top. Let set and refrigerate. Salisbury Steak INGREDIENTS 1 lb. ground beef 1 egg, slightly beaten 1/4 c. onion soup mix (dry) 2 T. shortening 1/4 c. dry bread crumbs 1/4 c. milk Sauce: 1 1/2 c. water 1 (2 oz.) can mushrooms 3 T. flour Remainder of onion soup mix DIRECTIONS Mix first 6 ingredients thoroughly and shape into patties. Brown shortening. Cover with sauce. Simmer for 20 minutes over low heat, stirring gently a few times. Tangy Green Beans INGREDIENTS 2 T. prepared mustard 1/2 t. salt 2 T. sugar 2 T. lemon juice 1/3 c. butter 2 T. vinegar DIRECTIONS Combine mustard, sugar, butter and salt, heat slowly, stirring constantly. Stir in lemon juice, vinegar and pour over 3 c. hot cooked beans. Heat thoroughly. Scalloped Potatoes (Diabetic friendly) INGREDIENTS 1 1/2 c. sliced potatoes 2 1/2 T. flour 1 T. chopped onion, if desired Salt and pepper to taste 1 t. butter, if desired 2 T. grated cheese, if desired 1 c. milk DIRECTIONS Place sliced potatoes, onion and butter in a small baking dish. Mix milk, flour and salt and pepper, and pour over potatoes. Sprinkle with grated cheese, if desired. Bake at 350° for 1-1 1/2 hours. Yield: 2 servings.
