Love you Mom.For Mothers Day.Forgetmenot carrot cakePhoto courtesy of reallifedinner.comINGREDIENTS2 c. unsifted all-purpose flour1 c. granulated sugar2 t. baking soda4 eggs2 t. double acting baking powder2 t. vanilla extract2 t. cinnamon3 c. peeled, grated carrots1 t. salt1/2 c. chopped pecans1 1/4 c. salad oil1/3 c. dates, chopped1 c. firmly packed brown sugarFrosting:4 oz. cream cheese, softened 2 c. confectioners sugar1/4 c. butter or margarine, creamed 1 T. lemon juiceDIRECTIONSPreheat oven to 350. Grease a 10" tube pan; set aside. In a medium bowl combine flour and next 4 ingredients; set aside. In a large mixing bowl beat oils and sugars until well mixed. Add eggs and vanilla; mix well. Add dry ingredients and continue mixing until well combined. Fold in grated carrots, nuts and dates. Pour into prepared pan. Bake for 60 minutes or until toothpick comes out clean.
