August 2018 42 FAMILY REUNIONS My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. Summertime gives many a chance to attend FAMILY REUNIONS. For us, this is always a great time to catch up, connect and love those family members you don’t see every year. For us, family reunions have taken place in Arizona, Wyoming, Iowa, and Nebraska. When Mom and Dad turned 75, they had a “family and friends” reunion and called it “The 150-Year Bash” and people came from all over. Looking at the pictures and watching the video brings a lot of good memories to mind. The 150-Year Bash lasted for 5 days and some of the stories of growing up, how life played out, the changes from 1940 to 2000 and just the emotional charge of seeing family as old as 98 attend made it a stand out reunion for years after. Life changes but my hope is that family always remains loved. Be sure and take those trips together down memory lane. Have a great summer! Guacamole INGREDIENTS 2 ripe avocados, peeled and pitted 2 T. lemon juice 1/2 t. chili powder 1/4 t. salt 1/8 t. garlic powder 1/8 t. onion powder 1/8 t. ground red pepper (cayenne) DIRECTIONS Mash avocados in a small bowl. Stir in remaining ingredients. Serve as a dip with chips or fresh vegetables. Makes 1 1/2 cups. Pina’ Colada Cake INGREDIENTS 1 pkg. yellow cake mix 1 can cream of coconut 1 medium size Cool Whip Coconut 1 can Eagle brand sweetened condensed milk DIRECTIONS Bake cake as directed. When done, poke holes in cake (use fork). Heat together milk and cream of coconut. While cake is still hot pour mixture over. Let cool for 2-3 hours (or overnight is best).
