ArizonaRealCountry.com 43 August 2018 Lemon Ice INGREDIENTS 1 c. sugar 1 c. boiling water 2 c. cold water 1/2 t. finely shredded lemon peel 1 c. lemon juice Lemon peel twists DIRECTIONS Dissolve sugar in boiling water. Add cold water, lemon peel and juice. Pour into shallow pan, freeze about 2 hours. Break up into small mixing bowl. Beat at low speed of electric mixer until fluffy. Scrape lemon ice into small goblets. Garnish with lemon peel twists. Serves 8. cool as a cucumber salad INGREDIENTS 1/2 c. salad dressing 1/4 c. sour cream 1 T. lemon juice 1/2 t. prepared horseradish 1 t. dried dill weed 1/8 t. salt 2 c. diced, peeled cucumber 2 cans (7 oz.) tuna, drained and flaked DIRECTIONS Blend together salad dressing and sour cream. Stir in lemon juice, horseradish, 3/4 t. dill weed and salt. Add diced cucumber and tuna. To serve, pile tuna mixture in center of serving plate, sprinkle with remaining dill weed and surround with cucumber slices. Triple Bean Salad INGREDIENTS 2 c. (1 lb. can) undrained green beans 2 c. (a lb. can) undrained yellow wax beans 2 c. (1 lb. can) undrained red kidney beans 1 med. onion, chopped or thinly sliced in rings and separated 1/4 c. chopped green pepper 1 T. liquid sugar substitute 1 t. celery seed 1/2 t. salt 1/2 t. pepper 1/2 c. cider vinegar 1 T. soy sauce DIRECTIONS Combine last 6 ingredients; place vegetables in a large mixing bowl and pour liquid mixture over them. Toss lightly, cover, and chill overnight. Just before serving, drain and toss lightly. Store with juice in covered container in refrigerator. Yields 12 servings. 623-232-8225 Must have coupon.
