July 2018 26 SUMMER TRAVELS My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. We had some great times traveling and summer always meant spending time where it was cooler. We spent much of the time in Santa Barbara, Santa Maria, Pismo Beach and Santa Clarita. Took in the sights, attended many of the festivals and farmers markets. It seems like we were always on the go, meeting other friends who RV’d as well and making new ones along the way, “The Most Interesting Man in the World." We did get to spend time with one of our Grandsons, Dillon, in Santa Barbara where he was going to college at Westmont in Montecito. Dillon played in a summer PDL Soccer league for the Ventura Fusion which was always fun to watch and that included them winning the National Championship. Have a happy summer and enjoy! Beau Catcher Fried Chicken INGREDIENTS 1 chicken, cut up for frying 1/2 c. buttermilk 1 c. flour 2 t. salt 1/4 t. pepper 2 t. paprika 1/4 t. thyme leaf 2 T. dried minced onion 1 stick (1/2 c.) butter DIRECTIONS Dip chicken pieces into buttermilk and then into a mixture of flour, salt, pepper, paprika, thyme, and minced onion. Melt butter in a shallow baking pan in a hot oven (400°). Remove baking pan from oven. As pieces of floured chicken are placed in the pan, turn to coat with butter. Then bake skin side down in a single layer. Bake in a hot oven (400°) for 30 minutes. Turn chicken.
