Dredge each of the pork chops (both sides) in the flour mixture, and set aside. Heat vegetable oil in a large non-stick or cast iron skillet over medium high heat. When oil is hot, add half the chops to the skillet. Cook until golden brown, about 3 minutes. Turn chops and cook 3 minutes more, or until desired doneness. Remove to a paper towel-lined plate, and repeat with remaining chops. Sprinkle with salt and pepper, and serve immediately. THANK THE LORD FOR GRANDKIDS My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. Some of the highlights of this time of year for Mom were spending time with the grandkids. Going to watch grandson Brandon play volleyball in college. There were some very exciting games and a trip to a National Championship that unfortunately didn’t bring the reward they were looking for. Mom always enjoyed the long talks and the mentoring she did with another grandson Jason too. The last few years of her life they built a very special bond that was shared by both. He is a special person that is loved. One of the granddaughters brought a lot of excitement and also a major health issue she had to deal with. Mom would have loved to hear what we heard this year 2018 and that is Kiersten is CANCER FREE! Thank you, Lord.
