May 2018 26 FAMILY, ABOVE ALL ELSE, WAS HAPPINESS TO MOM My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. One thing my Mom would tell you if she was here today is, “FAMILY: Love them, enjoy them, keep them close and whatever you do don’t judge them." This is what happiness was to my Mom, getting the family together and just talking to one another. homemade ice cream (old-fashioned vanilla) INGREDIENTS Beat well: 6 eggs 1 package instant vanilla pudding mix 1/8 t. salt 1 qt. half and half 2 1/2 c. sugar 1 qt. whole milk 1 T. vanilla 1 can evaporated milk DIRECTIONS How to make in a crank freezer: Chill the freezer can and mixture. Place can in freezer tub. Put dasher in place. Fill can 2/3 full (allowing for expansion). Cover. Adjust crank. Fill freezer tub 1/3 full of ice (crushed until it’s like rock salt). Add remaining crushed ice alternating with layers of coarse salt. Use 3 to 6 parts ice to 1 part salt for ice cream. Pack solidly. Let mixture stand in ice-packed freezer for 5 minutes before turning crank. Turn slowly at first (5 to 10 minutes), to ensure smooth, fine grained ice cream. Then turn rapidly until crank turns with difficulty. Draw off water. Wipe off and remove lid. Take out dasher, Plug opening in lid. Pack mixture down. Repack in ice and salt. Cover with heavy cloth.
