July 2017 26 My Mom (Dottie) grew up on a ranch in Wyoming as a kid, then moved to Nebraska and lived a short time in Iowa. Mom was born in 1935 and passed away in January of 2016. Mom, hosted a radio talk show for many years and wrote a newspaper article weekly. She also published many cookbooks. Dad and Mom retired to Sun City, Arizona and traveled for about 20 years, before passing away. She loved the country way of life and especially loved Country Music and making friends wherever they traveled. Every weeknight, on 96.3 Real Country at 6pm, you can hear “Dottie’s Country Memories”. You’ll hear some of her favorite artists like Merle Haggard, Johnny Cash, Patsy Cline, Glen Campbell and thousands more. This monthly remembrance of her, brings back fond memories of great meals together. We love her and hope you enjoy some of the recipes from her cookbooks. ENJOY :) This month we chose recipes that you can include in your Independence Day Celebrations! America's Favorite Martini INGREDIENTS Good grade domestic vodka Dry vermouth Green Chartreuse Large cocktail olives Fresh lemon peel Ice DIRECTIONS Chill vodka and martini glasses in refrigerator. Remove pimento stuffing from the olives; replace with a twist of lemon peel. When vodka and glasses are thoroughly chilled, combine 6 parts vodka to 1 part vermouth over ice in martini pitcher: stir until chilled and pour into glasses. Add one or two drops Chartreuse (no more) and lemon peel-filled olive. Important: Never add Chartreuse until after martinis have been poured, or melting ice will dilute this elegant liquer’s delicate essence. red cake with icing DIRECTIONS Cream 1/2 c. shortening (Crisco) with 1 1/2 c. sugar. Add 2 eggs and mix well. Sift 2 c. flour, 1/2 t. salt and 2 heaping T. cocoa. Add flour mixture alternately with 1 c. buttermilk and 1 t. vanilla. Add 1 oz. red food coloring. Fill empty bottle with water and add. Fold in 1 t. soda and 2 T. vinegar. Pour into prepared pans. Layer or jelly roll pan. Bake in a 350° oven for 30 minutes. ICING Cook 1 c. milk and 5 T. flour until thick. Cool completely. Beat 1/2 c. shortening (Crisco), 1 c. sugar and 1/2 c. oleo. Add cooked mixture and 1 t. vanilla. Beat until creamy. Spread over top and sides.
