November 2018 46 HOLIDAYS ARE FOR FAMILY & FRIENDS My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. There is nothing better than family and friends around. As we get closer and closer to the winter holidays, my Mom always reached out to everyone and made sure they felt welcome at home. Mom would always pick up the phone and call and was always planning way ahead of everyone else. As I look back, I believe that is why every Thanksgiving, Christmas and New Year’s went so smoothly and was so much fun. There is nothing like the feeling when family and friends arrive at the house and that same feeling stays all day because there is nothing like the feeling when family and friends leave the house. Know what I mean? Stuffed Turkey Slices (for the day after) INGREDIENTS 2 c. leftover mashed potatoes (may use instant) 1 egg, slighly beaten 1/4 c. herb-seasoned bread stuffing 1/4 c. chopped parsley 1/2 t. salt Dash of pepper 1/4 c. butter 1 medium onion, chopped (1/2 c.) 1/2 c. diced celery 8-10 large slices cooked turkey 1/2 c. stock or broth DIRECTIONS Heat oven to 425˚. Heat mashed potatoes or prepare according to directions on package. Beat in egg. Add bread stuffing, parsley, salt and pepper. Melt butter in small skillet; saute onion and celery until tender; add to potato mixture. For each serving, cut an oval of aluminum foil about 13x7". On half of foil place a slice of turkey, spread with potato mixture and top with second turkey slice. Pour 2 T. broth over turkey. Close and seal both by folding the two edges together. Repeat for remaining servings. Place on baking sheet. Bake 20-25 minutes until heated through. To serve; cut slits in top, fold back and serve with cranberry sauce.
