October 2018 42 IT'S THE LIFE IN YOUR YEARS My Mom grew up on a ranch in Wyoming as a kid, and then moved to Nebraska where she and my Dad were married. Mom was born in 1935 and passed away January of 2016. Mom and Dad retired to Sun City and traveled for about 20 years before her death. She loved the country way of life, Country Western music and traveling. Every weeknight on 96.3 Real Country you can hear “Dottie’s Country Memories” featuring her favorites like Johnny Cash, Merle Haggard, Dolly, Hank Williams, Patsy Cline and many others. This monthly remembrance of Mom brings back many memories. We hope you enjoy these recipes from her cookbooks. My Mom told me something that I try and remember each day, she said ”In the end, it is not the years in your life that count…it’s the life in your years.” Here’s a picture taken about 75 years ago of all my Mom’s brothers and sisters as kids and another of some of them as adults. Only one brother is still living. It’s sad, but also remarkable to think about all the memories and the lives they have lived. They all lived life to it’s fullest and I have stories that I could tell for months. My Dad and my youngest son Brandon are on a trip right now to connect with Dad’s friends and family in Nebraska. Hope it is one memorable trip for them. Dottie would have wanted everyone to get out daily and meet new people, see new things, create new adventures and keep learning every day of your life. Go out and make it a Great Day! Beef Jerky INGREDIENTS 1 beef flank steak (1-1 1/2 lb.) (may use round steak) Soy sauce Garlic salt Pepper DIRECTIONS Freeze steak partially for easy slicing. Trim off visible fat. Using a sharp knife, cut the flank steak, with the grain, into strips approximately 1/8" wide and length of the steak. Dip strips into soy sauce and place them flat and close together on a wire rack or racks, and place over a shallow pan. Sprinkle lightly with garlic salt and pepper. Turn and sprinkle other side. Bake in very slow oven, 140˚ for 8-10 hours or until dried and chewy. It should dry out, not cook.
