Triple Sec 3 scoops chocolate ice cream Whipped cream Mandarin orange segments DIRECTIONS Place crumbled angel or pound cake in demi-sifter (enough to cover bottom and slightly up the sides). Place 3 scopps of chocolate ice cream and 3-4 mandarin orange segments over the cake. Drizzle with 1/2-1 oz. Triple Sec. Garnish with whipped cream and orange curl. Hanukkah chicken soup INGREDIENTS 4-5 lb. stewing chicken, cut up 4 celery stalks - leaves chopped 2 qt. water 4 carrots, cut in lg. pieces 1 med. onion, chopped Fresh parsely Salt and pepper DIRECTIONS Place chicken in pot, cover with water and bring to a boil. Skim. Add vegetables and season to taste. Simmer until chicken is tender. Cool and strain. Serve hot with Kreplach. yam sunbursts INGREDIENTS 3 lg. oranges 2 cans (16 oz. each) yams, drained 1/3 c. brown sugar, packed 1/4 c. butter or margarine, melted Toasted coconut, mint sprigs and maraschino cherries DIRECTIONS Cut oranges into halves; squeeze, reserving 1/4 c. juice. Carefully remove pulp from orange shells; make scalloped design on edges of orange shells, using small end of a melon baller. Beat yams until smooth; beat in reserved orange juice, brown sugar and 3 T. butter. Pipe yam mixture into orange shells, using pastry tube fitted with large star tip, or spoon mixture into shells. Brush edges of shells with remaining 1 t. butter. Place filled shells into baking pan; bake at 350° until hot through, 20-30 minutes. Garnigh with coconut, mint or cherries. Burgundy Cranberries INGREDIENTS 1 lb. cranberries 2 c. sugar 1 c. burgundy DIRECTIONS Pick over cranberries and discard unfirm. Wash and drain. In a medium size pan bring sugar and burgundy to a boil. Boil over moderately high heat, stirring until sugar is dissolved. Add 1 c. of the berries to the boiling syrup and cook on high heat for about 1 minute until 3 or 4 berries pop. Quickly scoop out with slotted spoon. Repeat. Let syrup boil until 1 1/2 c. remain.
